Does anyone know what varieties of Crab bloom at particular times, to
coordinate with apple
blooms? (early, mid, late)

This info is going to vary, depending on whose pollination chart you go by,
and to some degree, where they're located. Bloom periods in the PNW may
not correlate exactly with what you'll experience.
Others on the list may have more reliable info, but here's what I've
gleaned from the few catalogs I've got with pollination charts:
From my old Bear Creek catalog:
Early:Chestnut, Dolgo, Manchurian Crab, Wickson
Mid: Almata(red-flesh), Winter Red Flesh
Late: Snowdrift Crab,Whitney
From Raintree:
Early: WSU AxP crab
Mid: Dolgo, Almata, Centennial, Red Flesh
One Green World claims all their apples/crabs, with the exception of Fuji,
to be mid-season bloomers - that would lump all the following crabs in the
mid-bloom period: Callaway, Dolgo, Kerr(I really like the fruit from this
one, but it's not been a heavy bearer in my orchard),
Yates, which is technically not a crab, but has a small, late-maturing,
long-keeping tasty apple, falls into the early season
