I was looking for deficiency symptoms in my 1956 Yearbook of Agriculture, on Plant Diseases, and found something interesting.  It said that apples grown on N deficient soils tend to be smallish, highly colored, and to have exceptional keeping qualities.  I would assume they refer to fruit from mature trees, when you would want to avoid a lot of vegetative growth anyway.  Donna
