I like this idea very much. The last time we canned tomatoes was a few years
back in late August. Did peaches and tomatoes over the course of a few days.
Hot and humid inside and out. Do you freeze them whole or quartered until
you're ready to use ... in January? I could freeze them pre-seeded. I have
Roma's growing with canning in mind. All the plants have fruit on them but
mine are just 3.5' to 4' tall at this point.
