Subject: [Homestead] High Blood Pressure and Sodium:Potassium Ratio

Not only are lots of junk foods high in sodium, many are very low in
potassium. I checked out the data for corn chips and potato chips, and
while both have about the same amount of salt, their sodium:potassium
ratios are very different. That's because potatoes are an extreme
source of potassium, but grains have very little.
I tend to view this as proof of the superiority of a diet based on
roots. They're so high in potassium that you can salt them normally
without ruining your health.
