Did you dig up some wild stuff or was it grown from seed? I believe the
cultivated varieties are better suited for eating. The quintessential recipe
in Japan (where Burdock is called gobo, pronounced with the accent on the
first syllable; first o is long) is as follows:

2 gobo roots cut into match sticks (soak cut gobo in water for 10-15 minutes
and drain)
2 large carrots cut into match sticks
1 1/2 T sesame oil
1 1/2 T sesame seeds
2 T sake
2 T sugar
2 T soy sauce

Heat oil and start by cooking the gobo as it takes longer to cook. Add
carrot and stir fry. Add sake, soy sauce, and sugar. Cook until gobo and
carrot are suitably soft but still firm. (It may take some practice to get
the gobo and carrot to be the desired consitency based on size of cut and
cooking time.) Add sesame seeds and serve. For a spicier version, add some
cayenne pepper.

This is a very simple dish but tasty and nutritious.
