I've had some success at baking some things that I
might otherwise fry. Put them in the oven on a cookie
sheet, breaded or not as called for. I use olive oil
spray, I've put my own oil in spray cans but haven't
had as good luck as they spray cans purchased at the
supermarket, those give a smoother lighter more even
spray. The reason this works well is that I can put
on an absolute minimum of oil but still get it have an
even and complete coverage.
Don't know if that will work with okra. of all of
the southern cultural traditions okra was one that
didn't make it to little dixie.
