Such a thing would be invaluable to me. As an IA who's looking for "new opportunities" [ahem], teaching is definitely an option. But I wouldn't want to try to craft a curriculum from scratch. I would like to learn as much as I can from the experiences of you IAs who have taught IA, esp. curricula that you have had success with.
Variety of environments is key... semester-long college course; special section as part of a larger course (on "multimedia", perhaps); beginning/intermediate/advanced level courses; special topics in IA, etc.
So... carry on!

Here's a question to start us off: Some of us have been thinking about what an IA curriculum might look like. A framework perhaps to help people create classes for different kinds of educational environments and which describes core information architecture competencies.
Would you want such a thing? Do you think it would be of practical use to you?
