I've never tried A4, so I don't know what it should look like as
regards to those screenshots, and mine always are set to US Letter
anyways. We do not have an /etc/papersize, but perhaps this Ubuntu

Or are you complaining that the programs are showing you zoomed out,
instead of fitting to the width of the screen? That's a user setting
for most programs, or the programs changed their default in recent
versions.
