I just put up 10 gallons of Kieffer for wine and used a lot of lemon
with it. It's interesting to me the cider tastes very different than
last year, all that I can think is that I pressed at a different stage
of ripeness.

If I can get organic Meyer lemons when I'm putting up pear preserves, I include quite a bit of chopped lemon, rind and all (except the seeds, of course). Mileage may vary.
