I recall reading an article (in 'Pomona'?  eslewhere?) that one problem w/ 
pod palitability was a peppery compound.  (Hence the goats which only ate so 
much of the pods-- too hot!)  Possible to find trees which produce milder 
pods?

Maybe someone on this net knows details on the attempt to hybridize tamarind
