[Market-farming] Head Lettuce at Market

OK, so I have all this gorgeous head lettuce.  I want to get it to market in one piece and somehow keep it relatively cool.  Does anyone have any suggestions?  I have a shed powered by AC and Coolbot so I start out with cold lettuce.  I'm thinking of putting it into black bulb crates after hydrocooling and then covering them loosely with burlap or plastic so they do not dry out in the cooler...I'll start cutting tonight for market Saturday.
 
I do have nice burlap bags that an organic coffee roaster person, and they seem to make good insulators, but I'd rather not get them wet.  I wonder if they would work ok anyway.
 
I can't exactly put them on ice at the farmers market, but can certainly keep them in shade.  My limited cooler space will be used for the triple washed and bagged arugula and mesclun.  Just wondering if anyone has any tricks up their sleeves.  It is always hot here in Delaware.  Even now.  I came in just now because the sweat bees were biting me like crazy and it is humid and yukky already...but I'm not complaining.
