I had hoped to pick all before it got too cold but things came up and it has overwintered there. Now, to make sure I get some spinach this spring, do I cut off those rubbery leaves and harvest the new leaves that will emerge or do i cut off all of the old leaves and await the new ones?? Thanks in advance for your help.??? georgene

The spinach I grow, mostly Samish, is not good after about three weeks
of picking. It bolts. One of the clues that it is getting ready to
bolt is the leaves start developing pointed ends. Bolting spinach is
bitter and not suitable for sale.
