Tomatoes also freeze well without pre-blanching, so could be packed in
bags, frozen and pulled out to make sauces, etc. when there's more time.
We give a lot of excess to home feeding programs for the elderly and
poor. They'll come and pick it up which makes it easier given how
little time there is for everything anyway.
And there's always the compost pile so "waste" turns to gold
(eventually).
