I wouldn't put in your general advertising that it's on the honor 
system; just put a sign on the stand, maybe something to the effect 
that you'll be at the stand only intermittently because you need to be 
busy growing the produce (which gives the impression that you are 
around and might show up at any moment) and to put the money in the 
lock box if you're not there, and take change from the change box if 
needed if you do leave out a change box; I know some stands around here 
do leave some small change and a few dollar bills out in a change box.

Of course, I haven't done this myself, just stopped at a number of such 
stands; one of which is a well known honey place around here which is 
on what passes for a main road in this area. They've been doing this 
for years. They don't have a sign explaining the system at all, just 
the prices and the lock box and sometimes a dish with a little change; 
the regulars are all used to this and I expect the tourists figure it 
out without trouble; but as your regulars are used to finding the stall 
staffed a sign might be useful for a while, to make sure they don't 
think you're closed or something is wrong if you're not there.
