[Market-farming] Overwintering root crops

We are in the Appalachian Mountains in Pennsylvania's Northern Tier.  We
have Zone 4 low temperatures almost every winter.  

We certainly have temperatures substantially below zero F every winter;
generally down near 20 below at least once per winter or even lower.

We plant our garlic in October and mulch it with a foot of straw.  It grows
beautifully in the spring and we harvest it in summer; usually in mid-July.
