I love beet greens. Last summer I bought beets with the greens attached. We ate the greens & I replanted the beets. They grew more greens for us to enjoy & then we ate the beets at the end of the season. LOL. I could eat a bowl of them rather than ice cream. From what I understand they are loaded with nutrition as well.
I make a casserole with beet greens, swiss chard, cabbage, kale, spinach & escarole. I saute the chopped up greens with onions, garlic, salt & pepper in olive oil. I transfer to a casserole dish & add grated cheese then wedge seasoned croutons into the mixture. I add some white kidney beans & a little chicken broth then bake to heat through & blend flavors. It's very tasty & my husband loves it.

Beet greens. Isn't that wild? Beet greens. I have them two months earlier than the competition. Followed by tomatoes and peas.
