I would hesitate to abandon any system that works till the new one has 
proven to be better.

A greenhouse is much like a boat, a camper, or motor home, it is always 2 
feet too short and there are always a trinket that one needs to spend money 
on.

Your questions indicate the you are not running recording thermometers so 
that you can tell what high and low temps have been, a cheap indoor/outdoor 
digital will do that, place the outdoor probe in the soil of a seed tray, 
the indoor part on the bench but shaded, and you will have a record of what 
is going on.

Seed trays in plastic, under a glass pane, or with a seeding dome should 
never be in direct sunlight, that would be what is known as a solar oven!
Once germinated, prop up or open any covers during the day.

Mice, moles, and voles will go for anything young and green, you may need 
some window screen to keep them out.......especially peppers and any of the 
vine crops.
