Tristand -

Knott's Handbook for Vegetable Growers has standard
yields for vegetables.

There are two big sources: crop enterprise budgets
and vegetable variety trials.

These are published by land-grant universities.
Sometimes from the Horticulture Dept but also
the Agriculture Economics Dept.

Many of the states host joint conferences and joint
publications, so keep an eye open for budgets and
variety trials from any state in the "Midwest",
which will have similar yields.

E.g.,
