Hi Paul,
    Season's Greetings!  If you are not growing alot of seed with the
purpose of producing seed for a seed seller, you CAN save whatever you'd
like for your own use and waay more.  I grow out about 16 kinds of both
heirloom and  or other OP beans and tomatoes each year, and have  saved
pepper  seed. I save lettuces, cukes, and squash - along with flowers and
culinary herbs. With the peppers and tomatoes ( tho the maters cross
infrequently), you can bag the blossoms to protect against alot of
pollination. I have used little mesh drawstring bags, ladie's stockings,
and pieces of old remay rowcover as barriers to pollinators.  Many things
you can pollinate quickly with a small camel hair brush or q-tip. 
Tomatoes are self-pollinating and other things you can pollinate as
needed. The pole beans rarely get crossed - sometimes at certain heights
by bumble bees - but usually all do come true to type.
