Late to the discussion.

I read this book (below) last year. It's good for reference (with
interesting diagrams of carbon chains and one of a triglyceride droplet
broken down and processed, from intestines to lymph system to liver:
Understanding Fats & Oils: Your Guide to healing w/ Essential Fatty
Acids<http://www.amazon.com/Understanding-Fats-Oils-Healing-Essential/dp/096450751X>by
Michael T. Murray, N.D. and Jade Beutler, R.R.T, R.C.P.

Additionally, the book Fats that Heal, Fats that
Kill<http://www.amazon.com/gp/product/0920470386/ref=olp_product_details?ie=UTF8&me=&seller=>by
Udo Erasmus, would be an excellent reference.

Mr. Erasmus <http://www.udoerasmus.com/firstscreen.htm> manufactures his own
choice oil blend:

Udo's Choice® Oil Blend is a special blend of carefully chosen, natural,
> unrefined, EFA-rich oils that has a pleasant, nutty, buttery taste. It
> contains oils from fresh, certified organic flax, sesame, sunflower and
> evening primrose seeds as well as oils from rice and oat germ, providing
> 'minor' ingredients with major health benefits. This oil blend has added
> non-GMO soy lecithin, which improves oil digestion and provides the building
> materials for healthy cell membranes. Udo's Choice Oil Blend also contains
> coconut oil, which is easy to digest and assimilate and can be used directly
> by our cells as a source of energy without increasing fat deposits.
