[Homestead] Goat meat

My goat meat has aged.

I'd wrapped the carcass and stored under some hay, but it started to
freeze. I ended up putting it in the unheated room in the house, it
was so cold out. That room doesn't freeze, it's usually 35-45 degrees
this time of year. I just wrapped it in garbage bags and then a tarp
and laid in on the floor. Today I cut it up. Took a shoulder for my
Dr. and one set of ribs that are sold. The rest, I just set in a pig
roasting pan and covered and put back in the room.

I pan fried some of the backstrap and it's really good. Tender and
tastes good. I'd always had this fear of the "goatie" taste. I've just
never had a goat that tasted like a buck in rut. Never. This one has
aged nicely.

Tomorrow I'm going to do a canner load of meat.
