The hide keeps the meat from drying out. On beef it doesn't make any
difference unless there is a lack of fat (more likely on dairy breeds). A
lot of deer and goats don't have fat cover, hence leaving the hide on.
Goats and hair breed sheep grow fat more on the inside and less on the
outside of the carcass.
