[Homestead] Apple harvest

Did I mention that I pulled in the last of the apples?  Total from the 
Arkansas Black was right at 20 pounds, which is just under half a bushel 
or about 2 pecks.  I didn't think that was too bad for a first harvest 
from an 8 year old tree(semi-dwarf, currently mature height at 
approximately 15' tall)
Tomorrow I plan to slice them up and make pie filling/cobbler filing. 
I'll probably mix a bit of pears into some, maybe make a few quarts of a 
  blueberry apple mix.  Does anyone have any other, unique ideas using 
apples that will go for pie and cobbler?  I have plenty of pears and 
blueberries, don't need applesauce..
