Correcto. Goats are made to absorb and digest all the fat in the milk. Cows
milk is broken down by bacteria and enzymes in the calf's gut but some of it
is intentionally left intact to be a lubricant.
When people ingest unpasturized and unhomogenized milk, we are only capable
of absorbing a portion of the fat and we pass the rest through. The natural
fat in cow's milk is ... well ... natural. But homogenized fat is not natural
and we have no physiological mechanism for handling it.
