Here is the response on the insulation question:
Dear Gene -- good to hear from you and thanks for your
interest in the Beehive oven.
The insulation material (a fire retardant rockwool,
used in fireplace insulation) between the two
terracotta domes enables the oven to reach temps. of
up to 1000 degrees inside, while not being hot enough
to burn one on the outside. Consequently the inner
oven dome heats quickly (ready to cook in only 45
mins.) while being slow to lose heat. It doesn't have
any health implications, and since your oven is
covered when not in use, there's no opportunity for
moisture to get in between the layers.
