[Homestead] Question Time Again

Well, here's my problem and why the questions.  It gets bloody hot here in 
the summer and fall (110 average) and I'm trying to figure a way to do 
canning without heating the whole neighborhood and us out of the house.

My plan is to stick a 110 induction stand alone in the screened porch and 
use it for canning.  This is fine with water bath canning because I can get 
steel speckle ware canners.  However, seems all the pressure canners are 
aluminum.

In Europe they use a lot of induction cooktops/hobs/whatever the heck they 
call them <g> , so maybe I need to find someone in Europe and find out what 
they use for pressure canning or even if they pressure can.

If not, the induction unit will reach 400 degrees which would seem plenty of 
heat even if it is second hand through the old cast iron thingy.
