There are several boondocking groups, I am the moderator of one.  There are 
many places to park.  You mentioned wally world and flying J, both of which 
I have used.  Love's is a little less RV friendly but they do have dump 
stations.  I am also a member of Escapees and some of its members allow 
overnight stays.  I spent almost two weeks on a farm in Missouri during 
which I built some things.  There are lots of places to park for short term 
and I have a few more invitations waiting.

On the other hand I am looking for a place to buy some cheap land to park 
the trailer and build a shop.  The where is currently wide open.
