Use CC-BY-SA or GFDL. You may always say that only particular version
is canonical and that only that version may be used as your church
hymn. And by using one of those two licenses you are allowing to the
people related to your church to make creative variations of the hymn
which you may or may not adopt for some purpose in the future.
If your hymn is used in inappropriate manner, there are other laws
(out of copyright laws) which guarantee your integrity.
